For over ten years, our sommelier Sylvia Dankbar-van Aans has been responsible for managing our wide-ranging, fascinating and high-quality assortment of wines. After various positions in restaurants of Johann Lafer, Joachim Wissler and others, the well-versed hotel expert and sommelier took over the management of the German Wine and Sommelier School in Berlin and Koblenz. In 2000, Sylvia Dankbar-van Aans established her wine management business WEINKONZEPTE UND MEHR, followed by Weinagentur Dankbar in 2005. Her job is extremely diverse and includes exclusive wine tours, wine seminars, wine cellar design services, event hosting and much more. Her excellent ties with the world's leading winemakers guarantee that our guests always have an exquisite choice of wines to accompany our high-quality cuisine. Every season, our assortment is modified to suit the relevant cruise. Each wine is tasted by our sommelier and exclusively selected for our vessels. A number of vineyards located along our cruise routes are also included in this selection process.

Holzapfel in the Wachau Valley

The Holzapfel wine-growing estate is situated in a former farmstead - an architectural jewel established 700 years ago by the canons of St Pölten Abbey and later given its Baroque character by Jakob Prandtauer. The estate covers a total area of 14 hectares and is managed using only traditional methods. It encompasses some outstanding sites such as Achleiten, Vorderseiber, Weitenberg, Klaus and Kollmitz. The stony, mineral-rich soils, interspersed with limestone and slate, provide a fertile environment for premium-quality grapes. Karl Holzapfel aims to produce distinct, fruity wines with plenty of character for everyday enjoyment, as well as dry and compact Smaragd wines with a complex blend of aromas and great potential. After their fermentation, the wines are stored sur lie. This produces truly distinctive wines that exhibit style, a clear and delicious fruitiness and an optimum balance of minerality and freshness. This very original vinification process gives the wines a special character to suit many different occasions. The assortment comprises the quality classifications Steinfeder, Federspiel and Smaragd, produced from the grape varieties Grüner Veltliner, Riesling and Pinot blanc. The Hippolyt range impresses with its unique creaminess, elegance and finesse.

Carolin Spanier-Gillot, wife of Hans Oliver Spanier, is the manager of Kühling-Gillot. Her family has been running the wine-growing estate in the Rhine Terrace region since the 18th century. This area near the Rhine is characterised by its unique red slate soils and has traditionally been known for growing Riesling grapes. Kühling-Gillot's twelve-hectare estate encompasses some renowned and distinguished sites, including the Rothenberg in Nackenheim, the Pettenthal and the Ölberg in Nierstein, as well as some wonderful sites in Oppenheim. The secret of the wines is the red slate ridge that is totally unique to the face of the "Red Slope". The soil stores daytime heat while the Rhine leads the cool night winds into the river valley. The result are mature and mild wines which are still precisely focussed and clearly bear the imprint of the red slate soil. Kühling-Gillot is a member of COVIN, and the wines undergo the same refinement process as the one adopted by BattenfeldSpanier: spontaneous fermentation, prolonged storage sur lie, large wooden barrels and gravity-flow wine movement. Not only is Kühling-Gillot by far the best winemaker on the Rhine Terrace, its four-grape rating in the GaultMillau and many other accolades, both in Germany and abroad, have made it one of the finest in Germany.
